The care and attention given to the fruit begins when the tree is still a seedling. At the end of the flowering stage, we harvest the fruits by hand only when they reach complete ripeness. Later, we select them and use them to obtain the extra jam within, adding a very small amount of sugar to ensure their preservation.
Jam on the market is called “Extra” if it contains at least 45% fruit. We use an average of 130 grams of fresh fruit for every 100 grams of jam, choosing not to integrate any type of thickener. Dyes are foreign to us and we use a low temperature cooking method, which allows us to maintain the natural flavor and color of the fruit.
