Born from a wonderful collaboration with Michelin-starred chef Davide Di Fabio, the “Bold Fruits” line embodies a vision of sustainable food, ensuring that every fruit from the harvest is valued—even those that might have otherwise been lost.

Together with Davide, we have explored the full potential of each fruit. What would traditionally be discarded during production now finds a second life, free of waste, through unique culinary applications. From tomato water preserved during the transformation of our passata to green apricots and peach blossoms, saved from thinning, every ingredient is reclaimed and repurposed.

Thus, these bold recipes are born—stories of revival and connection, where our love for the land and our dedication to preserving its fruits reflect our deep-rooted commitment to environmental protection.

This is our journey of growth and responsibility, where every action is naturally aligned with sustainability—a philosophy that takes shape through conscious choices, meaningful relationships, and impactful collaborations.

Peach blossoms

Springtime in our orchard is something magical, and we want to make it last as long as possible. The peach buds are hand-picked and preserved in rice vinegar, releasing an intense aroma of almonds and flowers, enhanced by a delicate acidic note.

Green Apricots

Traditionally used in ancient Persian, Asian, and Middle Eastern cuisine, green apricots are unripe fruits, harvested before they begin to ripen, develop their pit, and turn orange. Their flavor is tart, slightly bitter, with almond-like notes.

This particular variety of green apricots resembles the shape of an olive, making it a delightful surprise for any aperitif or tasting experience.

Water of the 3 Tomatoes

We love tomatoes so much that we even capture their pure essence. “Water of the 3 Tomatoes” by Podere Francesco is simply the natural water extracted from our tomatoes during the production of our passata, where it is removed to achieve a thicker texture.

This tomato water is then carefully refined until it becomes almost transparent, while retaining an intensely rich flavor with a completely unique consistency—unlike anything you’ve ever tasted from a tomato.

Green Apricot Extract

Our green apricots are thinned to allow the remaining fruits on the tree to develop a richer, more intense flavor. The resulting extract bursts with an incredibly fresh taste, featuring a tangy acidity reminiscent of lime juice, enhanced by complex aromatic notes.

With a herbaceous base, it also reveals delicate hints of apple, apricot, and almond, making it a unique and versatile ingredient.
